This is a great party main course to entertain guests for the Final Four!

Yield 8 portions

You will need:

1 ea - Whole Chicken fryer, cut in 8 pieces

2 Tbls - Famous Daves Chicken Wing Seasoning

2 Tbls - Vegetable Oil

lb.  -  Smoked Sausage Sliced

1 Med. (2 cups) - Onion, diced

1 Cup (1 ea.) -  Green Pepper,diced

1 Cup (2 stalks) Celery, diced

lb.  -  Shrimp, shell on

2 cups  - Rice, Long grain

3 cups  -  Chicken Broth, Homemade, or canned

1 Cup -  Famous Daves BBQ Sauce, Rich and Sassy,
Devil’s Spit or Chipotle work best.

In a large pan, add 1 tablespoon of the oil over medium heat. Dry the chicken pieces and coat in Famous Daves Chicken Wing Seasoning.  Put in pan when hot and cook on both sides until brown. Remove chicken.

Add Smoked Sausage, and cook until a little crispy. Add onion, celery and green pepper and sauté until translucent, about 3 minutes.

Add the rest of the oil, and add rice and sauté until all the rice is coated.

Add the Chicken Broth and the Famous Daves BBQ Sauce and Chicken. Bring to a boil, then down to a simmer. Cover and cook for 15 minutes, on low.

Add Shrimp, and cook for about 3 more minutes until shrimp are just done.

Let sit for about 5 minutes of the heat. Turn out on a big platter and serve.

This takes our classic, Famous Dave’s Rich and Sassy BBQ flavor to a refreshing salad filled with everything.

Serves 4

You will need:

2 - 6-ounce boneless skinless chicken breasts

2 Tablespoons Famous Dave’s Country Roast Chicken Rub

2 each slices thick sliced smoked bacon, cooked crispy and rough chopped.

2 each (1#) Alaskan king crab Legs (cooked, cooled and meat removed and chopped)

2 each hard-boiled eggs, cut in half, whites chopped, yolks saved for garnish.

3 each plum tomatoes, medium dice

2 each avocados, medium dice

1/2 cup scallions, chopped, down to white part.

1/2 head lettuce, washed and chopped into bite size pieces

1/2 head romaine lettuce, washed and ripped into bite sized pieces

4 ounces blue cheese (Maytag), crumbled

1 cup Rich and Sassy Creamy Ranch Dressing (See Recipe) or 1/2 cup of Wishbone Ranch Dressing with 1/2 cup Famous Dave’s Rich and Sassy BBQ Sauce.

Rub chicken breasts in Famous Dave’s Country Roast Chicken Rub. Prepare grill, or sautés pan and cook until done, about 3 minutes each side. Cool, cut in bite sized pieces.

On a large platter, spread mixed lettuces together on platter. In small circles starting in the middle, put a mound of crabmeat, surround with bacon, then chicken, then egg whites, avocado, tomato, green onion. Sprinkle top with crumbled blue cheese and grate egg yolk over the top with small cheese grater.

Drizzle dressing all around, and serve so each person can scoop up a bit of everything.

Rich and Sassy Ranch Dressing

2 tablespoon sour cream

1/2 cup Hellmann’s Mayonnaise

1/2 cup buttermilk

1/2 cup Famous Dave’s Rich and Sassy BBQ Sauce

1 garlic clove, minced to a paste

1/2 tablespoon parsley, chopped

1/2 tablespoon chives, chopped

1/2 Tablespoon shallots, minced

1/2 teaspoon celery seed

Combine all ingredients well. Refrigerate

These can be served as an appetizer, or as an individual serving. A cross between a quesadilla, a California style pizza and a flatbread. They can be cooked on the grill with the top on, or in a well-seasoned iron skillet on the stovetop.

Makes 2 - 12" flatbreads

You will need:

1 - 8 ounce chicken breast, boneless, skinless

1 teaspoon Famous Dave’s Rub for Chicken Wings

1 medium size red onion, sliced thin

1 slice, smoked bacon, cut across in strips.

4 ounces Famous Dave’s Smoky Chipotle BBQ Sauce

6 ounces Colby Jack, or Monterrey Jack cheese, grated

1 tablespoon olive oil

2 each 12" flour tortillas

1/2 cup chopped cilantro

Heat a few coals on a grill until glowing. Season great.

In the meantime, rub chicken breast with Famous Dave’s Chicken Wing Rub.

When coals are hot cook chicken until just done, about 3 minutes per side, remove and rest wrapped in foil 10 minutes.

Heat a medium pan over medium heat. Add bacon pieces and cook until fat just starts to render, add onions and cook on low heat about 10 minutes until onions are soft and cooked and just starting to caramelize.

Slice the chicken breast and toss in a bowl with the Famous Dave’s Smoky Chipotle BBQ Sauce.

Brush the bottom of flour tortillas with a little olive oil, top each with half the chicken mixture, onion/bacon mixture and top with grated cheese.

Put on hot grill with lid on for about 3 minutes, until bottom of tortilla is crispy and slightly charred. Remove carefully with a spatula.

Top with chopped fresh cilantro and serve.

You will need:

4 boneless, skinless chicken breasts

Your favorite Famous Dave’s BBQ sauce

4 sandwich buns, toasted

Lightly brush the chicken on both sides with oil and season to taste with salt and pepper. Grill over direct, medium heat until the meat is firm to the touch and internal has reached 165 degrees, approximately 8 to 12 minutes turning once. Remove from the grill and let rest 3 to 5 minutes.

Shred the chicken and add to the BBQ sauce. Heat through over medium heat. Do not allow the sauce to burn.

Added to sandwich buns and serve.

You will need:

4 boneless, skinless chicken breasts

Famous Dave’s Georgia Mustard BBQ sauce

Remove chicken from marinade and allow too stand at room temperature for 30 minutes. Discard used sauce.

Grill the chicken over Direct Medium heat untill meat is firm to the touch and internal has reached 165 degrees, approximately 8 to 12 minutes turning once.

Serve warm.

Makes 4 servings

Place chicken breasts and BBQ sauce in sealable plastic bag, using enough sauce to cover the meat. Refrigerate for 3 hours or more.

You will need:

Grill over medium hot until desired doneness or internal temperature has reached 165 degrees.

Serve with BBQ sauce or enjoy as is.

You will need:

1 whole Chicken, cut in pieces
1 cup Famous Dave’s Chicken Marinade
Famous Dave’s Roast Chicken Seasoning
Famous Dave’s Rich & Sassy BBQ Sauce

Place chicken into 2 gallon Ziploc bag. Pour Marinate over top. Seal bag and mix well. Place in refrigerator for 2 – 4 hours.

Prepare grill. If using a charcoal grill build fire on one side of grill. Bring temperature up to 350 degrees.

Remove chicken from bag and pat dry with paper towel. Lay chicken out on cookie sheet and season both sides with country roast seasoning.

Place on grill skin side down over charcoal or on gas grill. Chicken will flare up at the beginning. Cover grill to extinguish flames.

Move chicken around on and off hot spots until skin side is crisp. Turn pieces over and continue moving chicken around. If using charcoal move off the charcoal side and cover.

If using gas, move to top rack. Continue grilling until internal temperature is 165 degrees. This will take approximately 45 minutes to 1 hour.

Move chicken back over coals or bottom rack and begin slathering with BBQ sauce. Caramelize each side of chicken with BBQ sauce.

Remove from grill and enjoy.

Grilled BBQ Chicken Pizza

You will need:

1 portion Pizza Dough, proofed, rolled to approximately 12”
Olive Oil (as needed)
2 ounces Famous Dave’s Rich & Sassy BBQ Sauce
2 ounces Mozzarella, grated
4 ounces grilled or smoked de-boned Chicken, cut in ½” pieces
6 slices Smoked Mozzarella, ½” thick
8 slices Red Onion, 1/16” long
6 Cilantro Leaves

Place rolled dough directly on grill. Cook till brown and crispy. Turnover.

Working quickly, brush on olive oil, spread Famous Dave’s bbq sauce, and top with mozzarella, chicken, smoked mozzarella, red onion and cilantro. Close lid and grill till cheese is melted and dough is crisp.

Remove from grill and brush crust with additional olive oil. Cut and serve.

Mustard and Lemon Chicken

You will need:

1 whole Chicken 3 ½ lbs
2 tablespoons Butter
1 tablespoon Worcestershire
1 whole zested Lemon
1 Garlic clove
3 tablespoons Famous Dave’s Country Roast Chicken seasoning
1 tablespoon dry Mustard
1 Onion, peeled and sliced into 2” pieces
1 Lemon Wedges (use the one you zested)
Famous Dave’s Georgia Mustard BBQ sauce (as needed)

Combine butter, Worcestershire, lemon zest and garlic in sauce pan and melt over low heat. Remove from burner and set aside.

Mix together Famous Dave’s Country Roast Chicken seasoning and dry mustard.

Massage the chicken with butter mixture inside and out. Work the mixture under the skin without tearing.

Rub chicken with chicken seasoning/dry mustard mix inside and out.

Place chicken in plastic bag and refrigerate for 2- 4 hours.

Prepare smoker bringing temperature to 250 degrees.

Remove chicken from refrigerator and bag. Place onions and lemon wedges inside cavity.

Place chicken in smoker. Smoke for 2 ½ - 3 hours or internal temperature at legs is 170 degrees. Remove from smoker and let rest for 10 minutes. Remove onions and lemon wedges and discard.

Serve chicken with Famous Dave’s Georgia Mustard Sauce.

You will need:

Whole Chickens, rinsed and patted dry - 2 Each
Butter, soften - 2 Sticks
Famous Dave’s Country roast seasoning - 1 Tbls
Kosher Salt - 1 Tbls
Black Pepper - 1 Tsp
Cans of beer, 12 oz - 2 Cans

Prepare grill or smoker to 325 degrees.

Add soften butter and Famous Dave’s country roast seasoning to bowl and mix until all seasoning is incorporated into butter.

Place chicken breast side up on sheet pan. Without tearing skin, slide fingers between skin and breast to loosen. Work seasoned butter in between skin and breasts on both sides.
Rub remaining seasoned butter on skin of chicken, don’t forget the legs.
Season both chickens with salt and pepper.

Place roasting pan in smoker or grill. Open beer and place cans into roasting pans. Add 1 cup of water to pan. Place chickens onto beer cans.

Cover smoker or grill and maintain a temperature of 325 degrees. Roast for 20 minutes.
After 20 minutes Baste chicken with juices that collect in the bottom of pan every 10 minutes until chicken reaches temperature of 170 degrees at thigh. About 1 to 1 1/2 hours.

Remove Chicken from beer can and place breast side up on clean sheet pan. Cover loosely with foil and let sit for 10 minutes before carving.

Meanwhile skim of fat from juices in roasting pan. Let juices reduce by half. Taste for seasoning and pour over carved chicken.
