BBQ’s don’t get any better in the Midwest than fresh picked Sweet corn, grilled and brushed with a special topping.

You will need:

1 Tablespoon Famous Dave’s Rib Rub

8 ears fresh sweet corn ,husk peeled back, silk removed

1 cup Famous Dave’s Rich and Sassy BBQ Sauce

1 cup Hellmann’s mayonnaise

1 cup grated Parmesan

Get coals hot and use direct heat method on out door grill.

Sprinkle corn with Famous Dave’s Rib Rub

Put corn on grill and grill until corn is caramelized and golden brown on all side (turn often)

Meanwhile, mix Famous Dave’s Rich and Sassy with the mayonnaise.

When corn is done brush with the BBQ mayonnaise and sprinkle with the Parmesan cheese.

Grilled Asparagus

You will need:

1 pound asparagus

2 tablespoons extra virgin olive oil

½ teaspoon kosher salt

Grasp each asparagus spear and bend at the bottom, snapping off the tough bottom piece and discard. Using a vegetable peeler, peel off the outer skin from the bottom half of each spear.

Place the asparagus on a large plate and drizzle with olive oil and salt until evenly covered.

Grill the asparagus over direct medium heat until browned in spots but not burned or charred, approximately 4 to 6 minutes, turning occasionally.

Serve warm

BBQ Bacon & Water Chestnuts

Makes about 20 Hor’doervues

You will need:

1 can whole water chestnuts, drained

7 each slices bacon

1 cup Famous Daves Rich and Sassy BBQ Sauce

Put bacon on a baking pan. Preheat oven to 375 and cook bacon until about half way done, and still soft. Cut each piece in 3 pieces and set aside.

Wrap each water chestnut with bacon, and secure with a toothpick.

Toss in a bowl with Famous Daves Rich and Sassy BBQ Sauce and bake in oven until bacon is crispy about 8 minutes. Serve hot.

Grilled German Potato Salad

You will need:

New Potatoes - 3 Pounds
Kosher Salt - 2 Tbls
Olive Oil - 2 Tbls.
Thick sliced Bacon, diced - 1/2 Pound
Red Onion, diced - 1 Each
Cider Vinegar - 1/2 Cup
Famous Dave’s Chicken marinate - 1/4 Cup
Famous Dave’s Georgia Mustard BBQ Sauce - 1 Tbls
Vegetable Oil - 1/4 cup
Kosher Salt - 2 Tsp
Black Pepper - 1 Tsp
Fresh Parsley, chopped - 1/4 Cup

Place potatoes in stock pot and cover with water. Add 1 Tbls. of Salt. Bring to a boil and turn down to a simmer. Simmer for 15 minutes or until almost tender. Strain out water.
Prepare grill to medium high heat. Cut potatoes in half lengthwise. Place in bowl and toss with olive oil and 1 tbls. of salt. Place potatoes on grill cut side down. Grill to crispy and brown. Turnover and grill till crispy and brown. Remove from grill and dice quickly and place in bowl and cover to keep warm.

While potatoes are grilling, heat sauté pan on grill. Add bacon and sauté till crispy. Pull out bacon with slotted spoon and add to bowl with potatoes.
Add onions and sauté for 3 – 4 minutes. Carefully add vinegar, marinate and Georgia mustard and cook for additional 2 minutes. Whisk in vegetable oil.
Remove from grill and fold into potato/bacon mixture. Add parsley and salt and pepper.
Serve immediately.

Grilled Croutons

You will need:

Baguette Bread, Sliced 1/2” thick - 1 Loaf
Olive Oil - As needed
Famous Dave’s Steak and Burger seasoning - As neeeded

Prepare grill to medium heat.
Brush one side of sliced baguette with olive oil.
Season with famous Dave’s Steak and Burger seasoning.
Place on grill seasoned side down. Grill until crispy and brown.
